Vinum's Cuisine Festival

The grand stared chefs will animate, with a calendar of events at each of their restaurants, quality gastronomic moments (the programme is currently being prepared). In each gathering a stared, high rated chef from another Italian region will be the restaurant’s guest, to fulfil a fascinating “four-hands” on event.The final programme with all the individual details, along with the necessary information on how to participate will be published from the 15th March on the http://www.vinumalba.it/ web site!

Davide Palluda’s cuisine, is a perfect example of how a land and innovation may coexist, giving life to a series of intriguing and immediate dishes. His gastronomic culture is a result of studies and working experiences between the Langa and Liguria regions, constantly updated and strengthened, through research and in-depth studies of classics of the local traditions, along with the continuous confrontations with the most rigorous interpreters of the Albese cuisine, and also through experiences at the most innovative Italian and foreign restaurants. The solid cultural preparation is translated into a personal cuisine with clear intentions, capable of talking about the lands, without this being imprisoned in the rhetoric of traditions. In 1998 he contributed with some recipes for the publishing of the book 'Roero among colours and flavours'. In the year 2000 he was conferred with the “Michelin star' and voted the best 'young chef of the year' by the Guida Espresso. In 2001 he confirmed the “Michelin star' and, with the collaboration of the journalist Luigi Sugliano and the painter Eugenio Comencini, published 'At the Enoteca del Roero. Fulvio Siccardi, together with his wife Lucia Carrelli, have been managing the Conti Roero Restaurant since the 13th August 2004, situated right at the feet of Monticello’s castle, property of the Roero Counts since 1372. Fulvio Siccardi’s cuisine is concentrated especially on the genuine local products, without renouncing to the use of other ingredients from countries across the world, to be able to offer a traditional but at the same time a creative touch, without forgetting the wine and gastronomy heritage of his region. Even since it opened, the restaurant has received different reviews, amongst which one in the Gambero Rosso restaurant guide, another in the critical and greedy guide by Paolo Massobrio; an article regarding wines from Bargiornale, and a review by Edoardo Raspelli in Tuttolibri printed by La Stampa. In 2006 other than being inserted in the Espresso guide with a vote of 15/20, the Michelin star arrived, which gratifies any restaurant owner for the hard work carried out. For 2008 a little let down came from the Espresso guide; from 15/20 to 14/20, whereas the confirmation in the Gambero rosso guide with 82/100 (50 for the Cuisine), beam in Massobrio’s guide, and the star by Veronelli.

Guido was born from the union of two precious Piedmontese gastronomic realities: Guido from Costigliole and La Noce from Volpiano. The restaurant’s housed inside an agency in Pollenzo, a hamlet restored by Carlo Alberto in the 1800s, today heritage of the UNESCO. It’s very elegant, with perfectly laid spacious tables, and offers a marvellous view over the courtyard. With the restaurant, Guido, Ugo Alciati has contributed for many people all over the world to learn about the Piedmontese wine and gastronomic traditions. It specializes mainly in confectionery, a sector in which there’s more freedom to experiment, but also in the preparatory techniques of traditional dishes. In 2003, his restaurant was conferred with the first Michelin star. He offers a typical Piedmontese cuisine, prepared with innovative touches, linked with the local traditions and fruits from the land, capable of re-creating through happy and unusual combinations, flavours from the past using creativity and imagination.

Located in the village’s old primary school, a nice building from the Fascist period, in spite of its size, it offers a warm, elegant, intimate and refined setting. It’s managed by Maurilio Garol, with a cuisine that’s concentrated on products capable of exalting on your throat the grand Piedmontese delights. It’s called Locanda nel Borgo Antico (the Inn in the Ancient Hamlet) but it’s located in the middle of vineyards. However, in 2004, it moved to the historic centre in Barolo precisely in Boschetti locality, in the agricultural setting of the Zoccolaio farmhouse. Here, Massimo Camia an autodidact, has found the space needed to allow for further inspiration towards his Piemontese cuisine, revised with creativity and intelligence. Assisted by his wife Luciana in the dining area, he can rely on a team of high quality kitchen staff, on waiting staff lead by the brillant Riccardo Sgarra, whom also takes care of the wine-caller, and by Andrea Gallo who takes care of the service in the dining area. The restaurant is on two floors, with a modern panoramic veranda made from steel and glass, which overlooks the vineyards, propriety of the Zoccolaio, where it’s possible to enjoy an aperitif or an after dinner coffee. The Locanda’s cantina offers a selection of local vintage wines, and other national and foreign, boasting over 500 labels, with a selection exclusively dedicated to the grand Barolo. The delicate flavours and precious dishes unite with the intimate relationship that the team establishes with customers, which together make of this little relais a hidden corner of paradise, where returning may become a pleasant and delightful pleasure.

With a carrier behind his shoulders that has permitted him to work with the best chefs in Europe, such as Christian Willer alla Palme d’Or from Cannes, Gislaine Arabian al Ledoyen from Paris, Antoine Westermann al Buerehiesel from Strasburg, Michel Bras at Laguiole, Ferran Adria and El Bulli from Roses, Enrico Crippa, with the Ceretto family, has been managing for the last few years the restaurant located in Piazza Duomo, in Alba’s historic centre. Mr. Crippa, is a perfectionist, a rigorous and extremely thoughtful chef, that has found in this pureness the ideal expressive key needed for his own bright imagination. In 1990, in Sologne, he received first prize in an Artistic Cuisine Competition, doubling again in 1992. In 1996 he arrived in Japa, where for three years worked as a chef first at Kobe, for Gualtiero Marchesi, then in Osaka, at the Rhiga Royal Hotel. Here he learnt about the authentic Japanese cuisine, not to confuse with the fashionable sushi-mania, that deeply fascinated him, most of all under a philosophic profile. He prepares a clear, well-balanced cuisine, deeply grounded upon delicacy, culture, intuition, technical skills and a rare analytical capacity. All of which gives life to harmonic, personal, light and tasty dishes, cooked with genuine ingredients, chosen in a maniacal way.

Of Michelin stars, this restaurant has only seen one, and fairly old, it certainly is. Situated just on the outskirts of Barbaresco, on the road that leads to Treiso, since 1875 this solid extended building, in a nice strong yellow colour, has been an inn, trattoria and a change of horses for coaches. With a wonderful picturesque scenery of vineyards lying behind the large windows, since 1987 the brothers Scaiola have been working here. Flavio’s cuisine reveals to be more mature and convincing each year that passes, a chef completely in love with his job, just as he is with his restaurant. It’s just one of those places where you’ll also fall in love, and willingly return to, characterized by a gastronomic offer of well-balanced dishes from the Albese cuisine (among the specialities which stand out are the tabarin, made with 30 egg yolks and served with organic butter from the Cuneesi mountains). The cantina is looked after by Daniele, always complete, thanks to an attentive personal selection, that has deep roots with the local territory, but also selects with care wines from across the border.

In an elegant setting, furnished entirely with period style furniture, the Locanda has been completely refurbished, restoring the structural elements and furniture of a typical house from the Langhe. The restaurant’s rooms have been obtained in the most historic part of the farmhouse, whereas the vaulted ceilings are the original ones, in bricks. From the large windows there is a wonderful view over the hills with their perfect vineyards, that surround the Locanda. Enoteca Regionale del Barbaresco – Barbaresco
Program:
From 15,00 until 17,00, and from 17,00 until 19,00, the Enoteca’s organizing the “Tour of the cru of Barbaresco”. A territorial tour dedicated to the visits of some of the most prestigious vineyards of the area of origin of Barbaresco. Each tour, will be lead by an expert of the territory and of the wine-making production, and will embrace four communes which make up the origins of Barbaresco (Barbaresco, Neive, Treiso, San Rocco and Seno d’Elvio). Leaving around 15,00 and at 17,00 in front of the Enoteca Regionale del Barbaresco (returning back here). A meeting with a technical or a producer of the area is expected with each of the correspondent crus. The tours will take place in small auto-buses . Dolcetto: the Wine of Everyday Sacredness

In occasion of Vinum 2008, the Consortium for the Safeguard of Barolo, Barbaresco, Alba Langhe and Roero, are organizing an exclusive event of tastings and promotion, dedicated to the Dolcetto wine, in its many denominations.


The centre of this event will be the stage at the Sociale Theatre in Alba, with wine-tasting managed by qualified staff, along with in-depth studying moments animated by professional wine-tasters.


The undoubted protagonist will be Dolcetto, an ancient vine that draws its origins from everyday peasant life. From quotations dating from the end of 1500 beginning of 1600, it results how important it was for the entire hillside economy throughout the south of Piedmont, and an indispensable good for the exchange operations.


Still today, from the Marittime Alps, to the borders with Liguria, passing through Mondovì, Dogliani, Diano d’Alba, Alba, the hillsides around Asti, Acqui and Ovada, the Dolcetto vine holds an extremely important economic position for the region, (not at all marginal) from nearly 5.300 hectares cultivated, wines are produced, that if translated into bottles of 0.75 litres, represent almost 30 million pieces.


This deep attachment with the local territory, and a consumption which has remained limited to the surrounding areas to those of production, have penalized the circulation.


To what we’ve said, if we add the fact of having a name of dialectal origins “doset” or “dozet”, which is linked to the particular sensation of pleasantness and smoothness, that we feel when we eat a bunch of mature Dolcetto grapes, and not to the fact that it’s a sweet wine, we then understand how it’s difficult to introduce it in the international sales chain.


Dolcetto is a vine that produces wines with an impressive character, deeply typical according to the geographical area of production. From the grapes, intense deep ruby red wines are obtained with violet reflections, a distinct bouquet, especially if young, with smells that recall cherries and red fruits, at times slightly almondy, that evolving become more penetrating and complex with the refinement.


The Dolcetto wines, are characterized by a moderate acidity and a pleasant bitterish aftertaste. Usually drank young, but a wise work in the vineyards and a correct management in the production cantina, has allowed to obtain wines with a good longevity.

The producers of the Langa and Roero territories, exhibitors at the venue during the 1st-3rd-4th May, will open their wine cellars to the public on Friday 2nd May: an event in the event, organized to celebrate the extremely important role that all the numerous men and women from the wine-making world have had and still have, an achievement for wine tourism.

All wine tourists and enthusiasts, will have the possibility of entering into direct contact with the territory’s production realities, seizing the occasion to appreciate and learn all about the history and culture of wine... The event is also an opportunity to enjoy the fascinating enchanting atmosphere and picturesque scenery of the Langhe and Roero hillside.

Many of the wine cellars whom will be participating, will be preparing tastings and moments and animation.

Fra le novità che accompagnano l’edizione 2008 di Vinum ormai alle porte, arriva anche un nuovo riconoscimento che da quest’anno verrà assegnato ad Enti o soggetti che si sono particolarmente distinti nel loro ambito operativo.
La “Cantina di Vinum” rappresenta uno spaccato dell’eccellenza dei grandi vini del territorio di Langa e Roero e si compone delle tante etichette delle aziende che partecipano alla rassegna (sono 200 le bottiglie della Cantina 2008).
La prima edizione di questo Premio va al settore sport ed allo Juventus Football Club: la consegna è prevista per giovedì 24 aprile alle ore 18 con una cerimonia in programma presso il Teatro Sociale di Alba, a cui interverranno il Presidente Giovanni Cobolli Gigli, l’allenatore Claudio Ranieri ed il team manager Gianluca Pessotto.
L’iniziativa è promossa da Go Wine, d’intesa con la Città di Alba e con la collaborazione della Fondazione Centro Culturale San Giuseppe, presieduta da Roberto Cerrato.
La Juventus torna ad Alba al termine di una stagione positiva che ha visto i colori bianconeri ritornare grandi protagonisti del calcio italiano e dopo una serie di vittorie che hanno consolidato le speranze di un ritorno nel calcio europeo che conta.
Nel corso della cerimonia l’organizzazione di Vinum consegnerà anche un contributo da destinare, per il tramite della Juventus, all’Ospedale Sant’Anna, così legando l’incontro di Alba alle azioni di solidarietà che la Juventus svolge a favore di questo Ente.
Questo importante appuntamento arricchisce il calendario delle iniziative di Vinum che aprirà i battenti dei padiglioni e delle varie degustazioni venerdì 25 aprile.
